【摘要】 目的对枸杞酒中6种矿物质元素Ca,Mg,Fe,Zn,Mn和Cu的溶出规律进行研究。方法采用传统药酒泡制方法配制枸杞酒,高压密封消解法消解样品,火焰原子吸收光谱法(FAAS)和石墨炉原子吸收光谱法(GFAAS)检测。结果枸杞酒泡制过程中Ca,Mg,Fe,Zn,Mn,Cu含量随浸泡时间的溶出动力学方程回归关系极显著(P<0.01),Mg、Fe溶出速度快,15 d时就已达到溶出平衡点,其它元素在30 d内还未达到溶出最大量。从药酒中各元素的溶出率来看,30d时累积溶出率以Cu最高(65.93%),其次为Fe(58.29%)、Mg(47.11%)和Zn(42.61%),Ca(19.88%)和Mn(17.62%)的累积溶出率都较低。结论枸杞酒中6种矿物质元素溶出规律明显,可用于从矿物质元素角度理解枸杞酒中的化学组成和安全功效性及为药酒的日常饮用提供参考。

Abstract:ObjectiveTo study the dissolution characteristics of six kinds of mineral elements. MethodsTraditional technology was adopted to produce medicinal liquor. The FAAS and GFAAS combined with pressurized sample digestion were applied to determine the contents of mineral elements in Fructus Lycii medicinal liquor.ResultsThe dissolution kinetics regression equations were desirable (P<0.01), and the solubility of magnesium, iron, copper, calcium, manganese and zinc had obvious differences, with a quick dissolution rate for Mg, Fe, which reached the equilibrium point for 15 days, while other elements did not achieve the highest dissolution contents even for 30 days. From the aspect of dissolution rates of minerals in wine, the accumulated dissolution rate of Cu was the highest (65.93%), followed by Fe (58.29%), Mg (47.11%), Zn (42.61%), and that of Ca (19.88%) and Mn (17.62%) were relatively low after 30 days. ConclusionThe dissolution properties of six kinds of minerals are clear, and the dissolution curves and the accumulative dissolution rates of minerals in Fructus Lycii medicinal liquor wine reflect the solubility characteristics of various minerals in the liquor, which can be used to understand the composition, safety and efficacy of the medical liquor and advise people about the use of medical liquor from the perspective of mineral elements.

近年来,国外对葡萄酒中矿物质元素的研究已经比较深入,Pawel Pohl[1]综述了1997年以来对葡萄酒中矿物质元素来源、种类、含量、形态分析以及生物可给性(bioavailability)等方面的研究进展,国内对酒精性饮品中矿物质元素的研究,基本集中在对一些成品酒中矿物质元素成分的初步分析,如白酒、黄酒、啤酒、保健酒[2]、英平诸痹灵药酒[3]中矿物质元素总量的测定。
药酒历史悠久,源远流长。药酒具有剂量小、疗效显著、取材容易、配制方便等优点,为临床治疗的常用剂型,同时又适用于一般家庭根据需要自制[4],尤以单味中药药酒的配制多见,如枸杞酒、人参酒、五味子酒、仙茅酒等。据《饮膳正要》记载,枸杞酒具有补虚、益精、祛寒、壮肾功效,凡有阴阳两弱,如头目发昏,口舌偏干,阳痿滑泄、腰软诸症,视物模糊不清及未老先衰,皆可饮之。药酒可以作为人体摄入矿物质的一个重要来源,因此药酒中矿物质元素含量及溶出规律的研究具有重要的现实意义。
